It's 3:41 and I've had no exercise all day. Why am I so hungry?

I'm just wondering...are you getting enough protein? From your food description, it sounds like you are getting plenty of carbs, but maybe you need more protein? If I eat too many carbs and not enough protein, I will be absolutely ravenous.
I'm no diet expert, so I don't know if that's it. Just a suggestion.
